Spinach Breakfast Scramble

4 strips bacon, fried
onion
spinach
curry
garlic powder
pepper
garlic mayo
avocado
sprouted toast
ketchup

Fry bacon in pan, if not already cooked. Sautee onion in bacon grease. Add eggs, either scrambled or scramble them in the pan. Add your seasonings to taste. Add the spinach. Cook on low until the eggs are done and the spinach is wilted. Toast your sprouted bread. Spread half an avocado on the toast, along with garlic mayo. Put the egg scramble on top and then top with ketchup. Ideally serve with french toast, but it’s really a meal all by itself!
