Pumpkin Gnocchi

Serves 4-5

1 15oz can pumpkin
1 1/2 cup all purpose flour
2 garlic cloves1/3 medium onion
1/2 lbs. ground beef
4-5 large very ripe tomatoes
4 large shiitake mushrooms
1 cup fresh spinach
1 Tbsp parsley
1 Tbsp basil

Tomato Sauce:
Mince garlic and onions.
Cut tomatoes in chunks and thinly slice shiitake.
Heat olive oil in a pan, cook garlic and onions until they turn slightly brown.
Add ground beef, stir well, and cook until they become in bits.
(For a healthier option: Using paper towels, you can absorb oil from the beef.)
Add tomatoes. Stir well.
Add tomato sauce and shiitake mushrooms.
Simmer for a few minutes. Mix in herbs.

Gnocchi:
In a medium or large bowl, mix pumpkin, flour and parmesan cheese.
On a floured surface, shape the gnocchi. (You can use a fork to make the ragged mark.)
Leave them on the floured surface.
In a large pot, heat water with a dash of salt and bring it to a boil.
Cook gnocchi for a few minutes.
Serve with tomato sauce.
