Banana Walnut Cake…Go Eggless!

Ingredients
Whole wheat flour -2 cups
Baking soda – 1 tsp
Sugar -1 cup
Milk –  1/2 cup
Oil –  1/2 cup
Yogurt ( plain or banana)- 1/2 cup
Salt – a pinch
Vanilla essence is optional
Bananas – very ripe 4
Chopped walnut/ raisins/ pecans ( either one or mixed- your choice)- 1 cup chopped
Preheat the oven to 350F. Mash the banana well with ladle or fingers in a large bowl. Mix in flour, sugar, baking soda, salt, oil and yogurt. Add chopped nuts and the batter should have a thick-falling consistency. Pour the batter in 9″ greased baking tray or bundt pan. Bake for 40-50 minutes depending on the pan/oven requirement. Toothpick should come out clean when pierced through it. Cooking additional 10 minutes will make the cake into bread like consistency if desired. Enjoy!
