Serves 4
Ingredients
2 ripe yet firm avocado halves peeled and stone removed
3 chopped roma tomatoes
1 medium onion finely chopped
3/4 cup of finely chopped cilantro (save some for garnish)
4 garlic cloves finely grated
1/4 cup of fresh lime or lemon juice
1 small green chili finely chopped (optional)
salt to taste
Preparation
Cut avocados in small pieces approx. same size as tomato pieces. Gently mix-in all the ingredients with fork without mashing the avocado pieces. Adjust the salt/lime taste. Garnish with cilantro.
Serving suggestions
Scoop on an egg white omelet for a smart heart-healthy breakfast. Makes a great after school snack when served over slices of french baguette. As an alternative to chips, serve it over whole grain crackers at your next party.
